PEEPS® Cake Mix Christmas Cookie
This PEEPS® Christmas Cake Mix Cookies recipe is perfect for sharing! Add whatever mix-ins you like and decorate with PEEPS® Brand Marshmallows for a holiday cookie everyone will love!

INGREDIENTS
- 1 cup butter, melted and cooled
- 1/2 cup firmly packed light brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 pkg (15.25 oz each) Duncan Hines® Classic Yellow Cake Mix
- 1 cup all-purpose flour
- 3/4 cup candy-coated chocolate pieces
- 1/2 cup chopped pecans
- 1/3 cup white chocolate chips
- 1/3 cup peanut butter chips
- 1/4 cup holiday confetti sprinkles
- 1/2 cup milk chocolate chips
- 30 PEEPS® Brand Marshmallow Trees and Snowmen
INSTRUCTIONS
- Adjust oven racks to upper and lower third of oven and preheat oven to 350°F.
- Blend cooled melted butter, brown sugar, eggs, and vanilla in a large bowl with an electric mixer on medium speed until combined, about a minute. Pour in cake mix and flour and continue mixing just until blended. Stir in candy, pecans, white chocolate chips, and peanut butter chips.
- Scoop cookie dough into 2 tablespoon portions and roll into balls. Place sprinkles in a small bowl. Flatten cookie dough balls into 2-inch discs and press top of each into sprinkles. Place 8 cookies on a large baking sheet, evenly spaced.
- Bake 2 pans of cookies at a time, placing one in top third of oven and one in bottom third. Bake 14 to 16 minutes, until edges are lightly browned. Rotate pans halfway through baking for even cooking.
- Remove cookies from oven and cool on pans for 2 minutes. Remove to wire racks to cool completely. Melt milk chocolate chips in a microwave-safe bowl. Spread about a teaspoon of melted chocolate on each PEEPS® Marshmallow and place each on top of a cookie. Serve and enjoy these delicious Christmas cookies!
